An autoclave electric boiling pan heats water in a sealed jacket that surrounds the cooking tank. The jacket pressurises to 0.5 bar, raising the boiling point of the water so it transfers more heat into the pan without turning to steam. This method cooks large batches of food evenly and quickly, using less energy than an open boiling top would need for the same volume.

The operator fills the jacket automatically through the built-in water supply; a visual alarm and electronic control keep the level safe. Cold water enters through a dedicated tap, while a treated-water connection protects the jacket from corrosion. The cooking tank, made of polished AISI 316 stainless steel, holds up to 150 litres; a marked line shows the maximum food level. A pressed balanced lid seals the pan, and a safety valve releases excess pressure. The manometer on the control panel displays the jacket pressure at all times.

To start, the operator sets the desired food temperature on the control. The pan heats the water in the jacket, which in turn heats the tank. A thermal cut-out prevents overheating. Once the food reaches the set temperature, the pan maintains it automatically. A 2-inch drain valve empties the tank quickly, and a rotating fresh-water tap supplies rinse water directly over the worktop. The worktop itself has a 30 mm drain to carry away spills.

The body is constructed from high-quality stainless steel, including adjustable round legs that level the unit on uneven floors. A high chimney directs steam away from the work area. The pan connects to both hot and cold water supplies through G½-inch taps, and the treated-water inlet is G¾-inch. The electrical supply is 400 V, three-phase, 50 Hz, drawing 18.2 kW.

Cleaning follows from the sealed construction. The polished tank bottom and pressed lid wipe clean without seams that trap food. The jacket drains through the same 2-inch valve used for the tank, and the fresh-water tap rinses the worktop. The electrochemical protection inside the jacket reduces scale build-up, so the unit requires less frequent descaling than an unprotected pan.

Two versions are available: the GK511510-080GV with automatic jacket filling, and the GK211500-080GV with manual filling. When ordering, specify the gas type required (G20, G25, G25.3, G2.350, G27 or G30/G31). The unit is rated IPX4 for protection against splashed water from any direction, making it suitable for busy commercial kitchens.
