A boiling pan heats water in a sealed jacket that surrounds the cooking tank. The jacket transfers heat evenly across the polished stainless-steel bottom, eliminating hot spots and scorching. Steam pressure in the jacket rises to a controlled level, raising the temperature of the water inside the tank without direct flame or electric element contact. This indirect method keeps food from burning and allows precise temperature adjustment for simmering, poaching or rapid boiling across the entire 150 litre volume.
The operator fills the jacket to the marked level, then adds food up to the max line inside the pan. A rotating fresh-water tap supplies cold water directly into the tank, while a separate hot-and-cold connection feeds the jacket. The electronic control monitors water level and triggers an alarm if it falls too low, protecting the heating elements. A manometer on the panel shows jacket pressure, and a safety valve releases excess steam automatically. Temperature is set with a dial, and thermal protection cuts power if the pan overheats. Once cooking finishes, a 2-inch drain valve empties the tank quickly, and a worktop drain carries away any spillage.
The body and lid are made of stainless steel, with the tank bottom in AISI 316 for extra corrosion resistance. Pressed stainless-steel legs adjust for height and stability on uneven floors. A polished lid balances on a hinge, sealing in steam when closed. Electrochemical protection inside the jacket prevents rust, and a high chimney directs steam away from the work area. The control panel houses the manometer, temperature dial, water-level indicator and alarm light.
An 18.2 kW power rating means the pan draws a substantial load, requiring a dedicated 400 V three-phase circuit with neutral and earth. The 800 mm width and 930 mm depth fit a standard worktop footprint, while the 850 mm height to the rim and 1577 mm to the chimney top determine clearance above and below. The IPX4 rating confirms protection against splashed water from any direction, allowing safe use near sinks and taps.
Cleaning involves draining the tank, wiping the polished bottom and rinsing the jacket through the fresh-water tap. The electrochemical protection reduces scale build-up, and the smooth stainless surfaces resist staining. The 2-inch drain valve removes food debris without clogging, and the worktop drain prevents standing water around the unit.
