Fryer with cold zone the temperature of oil in the tank under the heater is significantly lower than the temperature of oil above the heater. Fryers with cold zone are perfect for deep frying breaded products. Additionally the tank is equipped with a filter for pre-filtering of frying fat. High chimney as well as embossed top plate prevent frying fat from getting into the appliance’s interior, and rotating heater makes cleaning easier.
A single 17-litre electric fryer that keeps the oil below the heating element cool, so crumbs and debris settle away from the heat and the oil stays cleaner for longer.
The fryer heats the oil with an electric element. A cold zone beneath the element collects food particles that sink, preventing them from burning and tainting the oil. This method extends the usable life of the oil and reduces the frequency of oil changes.
To use the fryer, the operator fills the tank with oil to the marked level, sets the desired temperature between 94 and 190 °C, and waits for the oil to reach the set point. The basket is loaded with food, lowered into the hot oil, and lifted when the food is cooked. A drain valve at the base allows the oil to be filtered and stored in the included container without lifting the vat.
The tank is deep-drawn from AISI 304 stainless steel, giving a seamless interior that resists corrosion and is easy to clean. The top plate is embossed to shed spills, and the chimney is removable for dishwasher cleaning. A rotating heater swings out of the tank, exposing the entire chamber for thorough cleaning. Thermal protection prevents the oil from overheating, and the high chimney keeps frying fat out of the appliance's interior.
Controls consist of a temperature dial for smooth adjustment within the 94–190 °C range. The 16.5 kW power rating indicates the load on the electrical supply; the fryer requires a dedicated circuit capable of handling this demand. The footprint of 400 mm depth and 730 mm width determines the space it occupies on the worktop or floor, while the height of 850 mm to the top of the body (1040 mm to the chimney) affects overhead clearance. The unit weighs enough to remain stable during use but can be moved on its adjustable round legs.
Cleaning involves draining the oil, removing the chimney and rotating the heater out of the tank. The tank, heater and chimney can then be washed, and the oil container and filter cleaned before reassembly. The embossed top plate wipes clean without trapping residue.
The fryer is designed to connect seamlessly with other GORT LINE 700 units using the hair-joint system, allowing multiple appliances to be aligned without gaps.
