Fryer with cold zone the temperature of oil in the tank under the heater is significantly lower than the temperature of oil above the heater. Fryers with cold zone are perfect for deep frying breaded products. Additionally the tank is equipped with a filter for pre-filtering of frying fat. High chimney as well as embossed top plate prevent frying fat from getting into the appliance’s interior, and rotating heater makes cleaning easier.
A twin-vat electric fryer separates the hot frying zone from a cooler sump beneath the heating element. Food particles sink through the oil, settle in the cold zone and do not burn, so the oil stays cleaner and lasts longer. The operator lowers baskets into the hot oil above the element, where heat transfers quickly and evenly to the food.
To begin, the operator fills each 8 L vat with fresh oil, sets the thermostat between 94 °C and 190 °C, and switches the fryer on. Once the oil reaches the chosen temperature, the baskets are loaded with food and lowered into the vats. A timer or visual check signals when the food is ready; the baskets are lifted out and drained over the vat. The drain valve at the base allows used oil to be filtered and collected in the container below, while the rotating heater swings out for thorough cleaning of the tank.
The fryer is built from AISI 304 stainless steel, with a deep-drawn tank that resists warping and an embossed top plate that sheds spills. A removable chimney directs steam away from the worktop and can be washed in a dishwasher. The body is finished in the same stainless steel, and the round legs adjust for uneven floors.
A smooth thermostat controls the temperature, while an additional thermal cut-out prevents the oil from overheating. The 14 kW power rating indicates the load on the electrical supply; a dedicated circuit is required. The footprint of 400 mm depth and 730 mm width fits standard worktop runs, and the overall height of 850 mm to 1040 mm allows clearance for the chimney. The weight of the unit means it is moved on castors or a trolley, not lifted by hand.
Cleaning involves draining the oil, removing the heater and chimney, and washing the tank and top plate. The cold zone collects debris, so it is wiped out after each service. The hair-joint connection system allows seamless alignment with other GORT LINE 700 units for a continuous worktop.
The fryer is supplied as a single unit with twin 8 L vats, adjustable legs and a drain valve with filter container. It is CE approved and designed for professional kitchens.
