The burners mix gas with air at the nozzle, producing a controlled blue flame that responds instantly to the knob. This direct heating method allows precise temperature adjustments, essential for tasks from simmering sauces to searing meats, and eliminates the lag of electric elements.
The operator places a pot or pan on the cast-iron pan supports, ignites the pilot burner to keep the appliance in standby, then turns the knob to the desired flame size. Each burner basin collects spills and splashes, preventing them from reaching the worktop. When service ends, the basins and burners lift out, and the removable chimney detaches, allowing both to be washed in a commercial dishwasher. The pilot burner remains protected, and the nozzles are shielded from debris.
The stove body is constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning. Cast-iron pan supports provide stability for heavy pots, while adjustable round legs allow the unit to be levelled on uneven floors.
