A refrigerated counter designed to keep salad ingredients crisp and fresh during service without breaking the cold chain. Cold air is drawn from the refrigeration unit at the base, then forced across the chamber by a fan. The air returns through a grille, creating a continuous loop that maintains an even temperature throughout the space. This method prevents warm spots and condensation, which can spoil leafy greens and delicate toppings.
The operator loads the counter by sliding gastronorm containers into the recessed chamber. The top plate is pre-cut to accept five GN1/3 and five GN1/6 containers, allowing a mix of ingredients to be organised side by side. A hinged stainless steel lid seals the chamber when not in use, protecting the contents from ambient air and kitchen heat. The lid lifts easily and stays open during service, giving staff quick access to every container.
Temperature is set on the digital panel, which displays the current reading. The range of +2 to +10 °C covers the safe storage of prepared salads, dressings and garnishes. Automatic defrost cycles clear the radiator without manual intervention, while a manual override is available if rapid defrost is needed. The refrigeration unit uses an ecological refrigerant, reducing environmental impact.
The housing is constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning. A polyethylene chopping board sits on top, providing a hygienic work surface for final assembly. The chamber itself is lined with 40 mm polyurethane insulation, which slows heat transfer and keeps the interior stable. Shelf guides are removable, allowing the chamber to be wiped down without obstruction. The magnetic door seal can be detached for thorough cleaning, and adjustable feet ensure the unit sits level on uneven floors.
The 104 L volume provides ample space for a full service without overcrowding. The 1420 mm width fits standard worktop depths, while the 700 mm front-to-back dimension allows it to be placed against a wall or island. At 0.50 kW, the unit draws a modest load on the 230 V supply, suitable for a dedicated kitchen circuit. The recessed chamber and removable guides simplify daily upkeep, and the ecological refrigerant complies with current regulations.
