A dough divider portions risen dough into equal weights without tearing or degassing. The machine receives a bulk mass of fermented dough, compresses it gently under a plate, then slices it with a grid of blades or wires. Each resulting piece keeps the same weight and density, so every pizza base proofs and bakes uniformly.
