A cast iron griddle transfers intense, even heat directly to food without flames, using a thick metal plate that holds and spreads thermal energy across its surface. The smooth plate allows delicate items such as eggs, pancakes and fish to slide easily while still searing meats and vegetables with a crisp finish. Heat is generated by electric elements beneath the plate and controlled by separate thermostats, letting the operator run different temperature zones at once for varied cooking tasks on the same worktop space.
To use the griddle, the operator first sets each of the three thermostats to the required temperature between 50 °C and 300 °C. The unit is then switched on and allowed to reach the set points before food is placed directly onto the smooth cast iron surface. Cooking liquid and fat drain into a removable drawer at the front, keeping the work area clean and reducing flare-ups. Once cooking is complete, the drawer is emptied and the plate is left to cool before cleaning.
The griddle is built on a stainless steel AISI 304 frame that resists corrosion and supports the 10 mm thick cast iron plate. The plate measures 970 mm by 480 mm, giving a broad, flat cooking area that fits standard catering worktops. A 9 kW power rating at 400 V requires a three-phase circuit, which is typical in professional kitchens and provides the high current needed for rapid heat-up and consistent performance. The unit weighs 69 kg, so it is moved with a trolley or two-person lift and positioned permanently on a sturdy counter or stand.
Three adjustable thermostats allow independent control of separate cooking zones, letting the operator fry eggs at one end while grilling steaks at the other. The 50 °C to 300 °C range covers everything from gentle warming to high-temperature searing. A 400 V supply means the griddle connects to a three-phase outlet, reducing voltage drop over long cable runs common in commercial kitchens. The 990 mm width and 540 mm depth fit standard worktop layouts, while the 220 mm height keeps the cooking surface at a comfortable working level.
Cleaning involves removing the cooking liquid drawer, emptying and washing it, then scraping the smooth cast iron plate while still warm to lift residue. The stainless steel frame is wiped down with a damp cloth and mild detergent. The 10 mm plate thickness retains heat, so it must be allowed to cool fully before deep cleaning to avoid thermal shock.
The griddle is supplied pre-equipped for butane gas operation, with natural gas injectors included for conversion if required.
