A dedicated electric fryer heats a deep stainless-steel tank of oil to crisp and brown churros, donuts and other yeast-raised pastries in volume. The heating element sits above a cold zone so fallen crumbs and batter particles settle below the hot oil, reducing smoke and extending oil life. An adjustable thermostat maintains the set temperature across the full depth of the tank, giving even colour and texture from the first batch to the last.
The operator fills the 30-litre tank with fresh oil, closes the safety drain tap and switches the unit on. The thermostat is set between 50 °C and 190 °C according to the recipe; a safety thermostat cuts power if the temperature rises above the set point. Once the oil reaches the target temperature, the large fine-mesh basket is loaded with raw churros or donuts and lowered into the oil. The basket is left in place until the pastries are golden and fully cooked, then lifted out and drained over the tank. A second basket can be loaded while the first drains, keeping output steady during peak service.
The fryer is built entirely of stainless steel for corrosion resistance and easy cleaning. The heating element is also stainless steel, mounted above the cold zone to prevent scorching of food particles. A safety drain tap at the base of the tank allows oil to be emptied quickly without tilting the unit. The adjustable thermostat and safety thermostat are housed in a control panel on the front of the fryer.
The 15 kW power rating requires a 400 V three-phase supply, the standard circuit for high-demand catering equipment. The 21 kg weight allows the fryer to be moved by two people or on a trolley, while the 670 x 650 mm footprint fits on a standard worktop or mobile stand. The 30-litre tank capacity enables continuous frying of large batches, and the 585 x 445 mm basket holds enough product to keep up with high-volume orders in snack bars and fair stands.
After each service the oil is drained through the safety tap, and the tank and basket are washed with hot water and detergent. The cold zone is brushed out to remove accumulated crumbs, and the heating element is wiped clean. The stainless-steel surfaces are dried to prevent water spots and corrosion.
The CFB30 is a single-tank fryer designed for churros and donuts. It is listed in the Casselin catalogue under high-volume frying equipment for snack and fast-food kitchens.
