An electric fryer heats a measured volume of oil by passing current through submerged elements. The oil transfers heat evenly to the food in the basket, producing a crisp exterior while sealing moisture inside. A drain tap at the base allows the oil to be removed without tilting the unit, reducing spillage and speeding up oil changes between batches of different foods.
The operator fills the removable 10 litre tank with fresh oil, closes the lid and sets the desired temperature on the control panel. The heating indicator light shows when the elements are active. Once the oil reaches the set point, the basket is loaded with food and lowered into the tank. The timer is started, and the food fries until the timer signals the end of the cycle. The basket is lifted out, drained briefly over the tank, and the food is transferred to a worktop or holding tray. The drain tap is opened to empty the oil when the fryer is switched off or when a different oil is required.
The body, lid and control panel are constructed in stainless steel for corrosion resistance and easy cleaning. A single removable tank holds 10 litres of oil, and a basket measuring 215 x 315 x 140 mm fits inside it. The control panel includes a timer, a temperature selector covering 60 °C to 190 °C, and a heating indicator light. A double power contactor isolates the elements when the fryer is not in use, and a safety thermostat cuts power if the oil overheats.
The 9 kW power rating requires a 400 V three-phase supply, which is standard in professional kitchens for high-demand appliances. The 15 kg weight allows the unit to be moved by one person using the handles on the sides. The footprint of 330 x 715 mm fits on most worktops or mobile stands, leaving space beside it for food preparation and basket draining.
After each service, the basket and tank are removed and washed in a sink or dishwasher. The stainless steel body and lid are wiped down with a damp cloth and mild detergent, avoiding abrasive pads that could scratch the surface. The drain tap is opened to clear any remaining oil, and the tap itself is unscrewed periodically for cleaning to prevent clogging.
The CFEV10TC is listed in the Casselin catalogue under electric fryers with integrated taps.
