A double electric fryer divides its oil into two separate vats so that two batches can be cooked at once or different foods kept at different temperatures. Each vat heats oil with an immersed stainless steel element; the element warms the oil around it, and natural convection carries the heat throughout the vat. A cold zone beneath the element collects food debris that would otherwise burn and spoil the oil, extending the oil's working life and keeping the flavour clean.

The operator lowers a basket of food into the hot oil, where it fries until the set time elapses or the operator lifts it out. An adjustable thermostat controls the temperature of each vat independently, allowing one side to hold chips at a steady heat while the other side fries fish at a higher setting. A safety thermostat cuts power if the oil overheats, preventing fire and damage to the appliance.

To use the fryer, the operator fills each vat with oil to the marked level, then sets the desired temperature on the thermostat. Once the oil reaches the set temperature, a signal indicates that frying can begin. The basket is loaded with food, lowered into the oil, and timed. After frying, the basket is lifted out and drained over the vat; an internal drip tray catches any oil that drips from the basket. When the oil is no longer needed, a drain tap at the base of each vat allows the oil to be emptied quickly into a container.

The fryer is built entirely of stainless steel, including the heating elements, vats, and outer casing. The height of the unit can be adjusted to match the worktop or to level the appliance on an uneven floor. Each vat holds 13 litres of oil, and the baskets measure 210 mm by 300 mm by 120 mm, giving enough space for a standard portion of chips or a fillet of fish.

The power rating of 9.9 kW per vat requires a 400 V three-phase supply, the standard circuit in professional kitchens for high-demand appliances. The 64 kg weight means the fryer is moved with a trolley or by two people, not carried by hand. The footprint of 640 mm by 600 mm fits on a standard worktop or counter, while the adjustable height of 860 mm to 920 mm allows the fryer to be positioned under low cupboards or extractor hoods.

Cleaning involves draining the oil, removing the baskets and drip tray, and wiping down the stainless steel surfaces with a damp cloth and mild detergent. The cold zone should be checked regularly for debris, which can be scooped out after the oil has been drained. The heating elements and thermostats require no maintenance beyond keeping them free of oil residue and debris.
