An electric fryer heats a measured volume of oil to a set temperature, then holds it steady while a perforated basket lowers food into the bath. The oil transfers heat rapidly and evenly, cooking the surface quickly to a crisp finish while sealing moisture inside. Because the oil surrounds the food, the process works without turning or stirring, freeing the operator for other tasks. The same principle applies whether the fryer is small or large, but a 16 litre tank gives enough capacity for a busy service without taking excessive floor space or power.
The operator fills the tank to the marked level, sets the temperature between 60 °C and 200 °C, and starts the heating elements. A light shows when the oil is up to temperature. The three elements can be switched on or off independently, so the fryer can run at lower power when demand is light. Once the oil is hot, the basket is loaded and lowered into the tank. A timer tracks the cooking time; when it expires, the basket is lifted out and the food drained over the tank. A drip tray inside the holder catches any oil that falls, keeping the worktop clean.
The fryer is built in stainless steel throughout, including the tank, outer casing and control panel. A safety thermostat cuts power if the oil overheats, and a double power contactor provides redundancy on the supply. A drain tap at the base of the tank allows the oil to be emptied without tilting the unit, and the tap threads match standard catering hoses for easy disposal.
The controls consist of a temperature dial marked from 60 °C to 200 °C, three on-off switches for the heating elements, and a mechanical timer. The indicator light glows when any element is active.
A 12 kW rating means the fryer draws a substantial current and must be connected to a three-phase 400 V circuit. The 35 kg weight allows it to be moved by two people or on a trolley, but it is not designed to be carried by one person. The footprint of 400 mm by 660 mm fits on a standard worktop or can be placed on a mobile stand if floor space is tight.
Cleaning involves draining the oil through the tap, wiping the tank and basket with a non-abrasive cloth, and removing the drip tray to empty and wash it. The stainless steel surfaces can be sanitised with standard kitchen chemicals, but abrasive pads or powders should be avoided to prevent scratching.
The basket measures 285 mm by 327 mm by 235 mm, giving enough room for a full load of chips, fish fillets or other standard items without crowding. The fryer is supplied as a single unit; no variants or accessories are listed for this model.
