It combines two heating methods: three overhead Philips lamps provide gentle warmth from above, while a heating element beneath the tray delivers consistent base heat. This setup helps maintain the texture and quality of the fries during service without drying them out or making them soggy.
To use, the operator moves the trolley to the fryer, fills the two GN 1/6 containers with cooked fries, and places them on the row grids. The adjustable thermostat, ranging from 50 °C to 90 °C, allows precise temperature control. An on/off switch activates both heating systems at once. A glass panel on either side enables staff to check the fries without opening the unit, and a fat-collecting pan underneath catches any drips. A built-in salt shaker is conveniently positioned for seasoning.
Constructed entirely from stainless steel, the trolley is both hygienic and durable. A storage cupboard beneath the holding area offers space for utensils or extra supplies. The trolley's dimensions of 600 mm by 700 mm ensure it fits standard kitchen aisles, and its height allows clear visibility across the workspace. It operates on a 230 V single-phase supply, powering the 1.35 kW heating elements, which aligns with most professional kitchen setups. The 66 kg weight provides stability while still allowing easy repositioning.
Maintenance is straightforward due to the stainless-steel build. The glass panels can be removed for cleaning, the fat pan slides out for emptying, and the GN containers are dishwasher-safe. Once cooled, the heating lamps and element can be wiped down with a damp cloth. The interchangeable glass and removable parts simplify daily upkeep.
The CPDSDC600 is part of Casselin's professional catering range, specifically under mobile holding and display trolleys.
