A double electric fryer divides its oil between two 10 litre basins, letting a kitchen fry two different foods at once without flavour transfer. Each basin has its own heating element beneath the oil. The element heats the oil by conduction; the oil then transfers heat to the food in the basket, cooking it evenly and quickly. Because oil holds heat longer than air, the fryer recovers temperature fast after a load is added, keeping a steady frying environment.
To start, the operator fills each basin with oil up to the marked level, then plugs the fryer into a 230 V single-phase circuit. The adjustable thermostat is set between 60 °C and 190 °C, depending on the food. Once the oil reaches the chosen temperature, the heating indicator light confirms it is ready. The operator lowers the basket into the oil, and the food fries until the timer sounds or the operator lifts the basket. After frying, the basket drains over the basin, and the food is removed. The two drain taps at the front let the operator empty each basin separately without tilting the unit, making oil changes or cleaning easier.
The body, lid and control panel are made of stainless steel, which resists corrosion and is easy to wipe down. The heating elements tilt out of the basins, exposing the interior for thorough cleaning. Each basin has its own power outlet, so one side can be switched off while the other stays in use. The adjustable thermostat controls the oil temperature, and a safety thermostat cuts power if the oil overheats. Two baskets, each measuring 215 x 315 x 140 mm, fit the basins and hold the food during frying.
The 230 V supply means the fryer plugs into a standard single-phase circuit found in most professional kitchens. The 2 x 3.6 kW power rating shows the load on the circuit when both elements are on; this load is split between two outlets, so the fryer can run one basin at a time if the supply is limited. The 18 kg weight makes the unit stable on a worktop but light enough to move with two people. The 587 x 745 x 456 mm footprint fits a standard worktop depth and leaves room for the baskets to drain beside the basins.
Cleaning involves tilting the heating elements out, draining the oil through the taps, wiping the basins and baskets, and rinsing the stainless steel surfaces. The safety thermostat and heating indicator light need no regular maintenance beyond checking they work during use.
