An electric pasta cooker brings boiling water to a rolling temperature and holds it there so strands cook evenly without sticking. The heating element sits beneath the stainless steel tank and warms the water by direct conduction. A thermostat cycles the power to keep the temperature steady, letting the operator set the exact point for fresh pasta, dried pasta or vegetables. The rethermalizer function raises the water quickly from cold to a lower pre-cook or defrost temperature, saving energy when the full boil is not needed.
To start, the operator fills the 9 litre tank through the front tap or connects a water line for continuous supply. The thermostat is set to the required temperature and the unit switched on. Once the water reaches the set point, the baskets are loaded with pasta or vegetables and lowered into the tank. The round baskets hold smaller items like penne or peas; the rectangular baskets keep longer strands such as spaghetti or green beans aligned. After the programmed cooking time, the baskets are lifted out and the contents drained over the tank. The round baskets can then be stored on the plate beneath the unit, keeping the worktop clear.
The construction is stainless steel throughout, chosen for heat conduction and resistance to corrosion in a wet environment. A single On/Off switch controls the power, while the thermostat dial adjusts the water temperature. The front tap allows quick draining and refilling without moving the unit, and the water connection point enables a permanent hose to be fitted for continuous operation.
The 3.3 kW power rating means the cooker draws a steady load that requires its own dedicated circuit in a professional kitchen. The 230 V voltage matches the standard single-phase supply found in most commercial premises. At 20 kg the unit is light enough to be moved by one person but stable on a worktop. The footprint of 354 mm depth, 587 mm width and 520 mm height fits between standard worktop cupboards and under most extractor canopies.
Cleaning is straightforward: the tank is emptied through the front tap, wiped down with a soft cloth and rinsed. The baskets are removed and washed separately. The storage plate beneath the tank keeps the baskets off the floor and makes them easy to reach during service.
The cooker is supplied with four small round baskets and two rectangular baskets, allowing different pasta shapes and vegetables to be cooked simultaneously. A water connection kit is available separately for permanent installation.
The Casselin CCAP9 is listed in the catalogue under electric pasta cookers and rethermalizers for professional catering.
