A professional electric pasta cooker heats two independent stainless-steel tanks, each holding 9 litres of water, so that long and short pasta shapes can be cooked simultaneously without flavour transfer. The heating elements raise the water to a rolling boil, and the thermostat maintains the temperature so that the pasta cooks evenly and does not stick. A rethermalizer function allows the same tanks to pre-cook vegetables or defrost frozen ingredients without changing the set-up.
To operate, the operator fills each tank through the front tap, which can be connected to a permanent water supply for continuous use. The thermostat is set to the required temperature, and the unit is switched on. Once the water reaches the set point, the pasta is lowered in the baskets—eight small round baskets for short shapes and four rectangular baskets for long shapes. After the cooking time, the baskets are lifted, drained over the tank, and the pasta is tipped directly onto serving trays or into holding containers. The same tap that fills the tanks also drains them for cleaning or water changes.
The construction is entirely stainless steel, including the worktop and the storage plate underneath that holds the round baskets when not in use. An on/off switch and a thermostat dial are the only controls, keeping the interface simple for busy kitchens. The 6.6 kW power rating requires a 400 V three-phase supply, which matches the standard circuit used by most professional catering equipment. The 35 kg weight allows the unit to be moved with a trolley but is stable enough to stay in place during service. The footprint of 710 mm wide by 587 mm deep fits on a standard worktop or can be placed on a mobile stand if floor space is limited.
Cleaning follows from the construction: the stainless-steel tanks and baskets are lifted out and washed in a sink or dishwasher. The front tap is disassembled for descaling, and the storage plate underneath is wiped down after each service to keep the baskets clean. No additional accessories or consumables are required beyond the twelve baskets supplied.
