A smooth electric griddle provides even heat across a flat steel plate, allowing chefs to cook large quantities of food directly on the surface without hot spots. The heating elements beneath the plate transfer energy to the steel, which then conducts it uniformly to the food. This method ensures consistent browning and texture, whether searing burgers, grilling vegetables or cooking pancakes, while the absence of raised edges makes flipping and turning easier than on a ridged griddle or chargrill.
To use the griddle, the operator first positions the two grease drip trays beneath the front edge of the plate. Each of the two heating zones is controlled by its own adjustable thermostat, set independently between 140 °C and 300 °C. Once the desired temperatures are selected, the unit is switched on and allowed to reach the set points. Food is placed directly onto the smooth 900 x 400 mm plate, cooked to the required doneness, then removed with a spatula. A safety thermostat prevents overheating, automatically cutting power if the temperature exceeds safe limits.
The griddle is built from stainless steel for the exterior and frame, while the cooking surface is a solid steel plate that retains and distributes heat evenly. Two grease drip trays collect excess fat and oil, reducing flare-ups and simplifying cleaning. The dual 3.2 kW and 2.4 kW heating elements draw power from a single-phase 230 V supply, typical of professional kitchen circuits. At 60 kg, the unit is heavy enough to remain stable on a worktop but can still be moved with a trolley or two-person lift. Its 900 mm width fits standard catering worktops, while the 588 mm depth allows it to be placed against a wall without obstructing workflow.
After service, the solid steel plate is scraped clean while still warm, then wiped with a damp cloth. The grease drip trays are removed, emptied and washed separately. The stainless steel exterior can be wiped down with a mild detergent, avoiding abrasive pads that could scratch the surface. Regular cleaning prevents grease build-up and maintains the griddle's performance.
It is categorised under electric griddles in the Casselin range.
