A heated steel surface keeps plated food at serving temperature without overcooking. The Casselin GN1/1 unit uses an electric element beneath a flat stainless-steel plate to radiate gentle, even heat across the entire surface. A built-in thermostat cycles the element on and off, holding the chosen temperature between 40 °C and 90 °C. This method prevents hot spots and allows precise control, so sauces stay fluid, pastries remain crisp and proteins do not dry out. To use the unit, place it on a stable worktop near a 230 V outlet. Turn the thermostat dial to the desired temperature; a small indicator light glows while the element is active. Once the light cycles off, the surface is ready. Slide GN1/1 gastronorm trays or individual plates directly onto the steel. The low profile and shallow height let staff reach across without stretching. When service ends, turn the dial to the minimum setting, unplug the unit and allow it to cool before cleaning. The construction is a single sheet of stainless steel supported by a pressed-steel frame. The element is sealed beneath the plate, and the thermostat knob is mounted on the front edge for easy access. The 0.45 kW power rating draws a modest load, suitable for a standard circuit found in most professional kitchens. The 630 mm length matches a GN1/1 tray, while the 345 mm width fits neatly between cupboards or beneath a shelf. At 4 kg, the unit can be lifted by one person and stored on a shelf when not in use. Cleaning is straightforward: wipe the stainless-steel surface with a damp cloth and mild detergent after each service. The sealed element and smooth underside collect little grease, so a weekly deeper clean with a non-abrasive pad keeps the unit in good condition. The solid stainless-steel plate slides straight onto the counter without tools and stays put during daily service.
