A salamander grill directs intense overhead heat downward onto food, browning and finishing dishes without turning them. The element sits above an adjustable grid, concentrating radiant heat where it is needed. This method gives a crisp surface to gratins, melts cheese evenly, and warms plates without drying the contents beneath. Because the heat source is fixed and the grid moves, the operator controls the distance between the element and the food, adjusting the intensity without changing the temperature setting.
To use the Casselin Salamander Mod SEH003, position the unit on a stable worktop and connect it to the appropriate voltage supply. Place food on the grid and slide it into the open front. Set the manual or automatic regulator to the desired heat level; the overhead element activates and the food browns from above. A drip tray beneath the grid collects fat and juices, preventing flare-ups and keeping the work area clean. Once the surface is done, remove the grid and serve or hold the dish at a lower setting.
The body is fabricated from CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin polish finish, resisting corrosion and standing up to daily cleaning. Chromed details protect moving parts and add contrast. Four supporting feet raise the unit off the worktop, allowing air to circulate underneath and making it easier to slide the drip tray in and out.
The 4.6 kW power rating means the grill draws a substantial current, requiring a dedicated circuit in a professional kitchen. The voltage options—400 V three-phase with neutral, 230 V three-phase, or 230 V single-phase—allow the unit to be installed on most commercial supplies without a transformer. The 55 kg weight keeps the grill stable during use but calls for two people to move it safely. The 600 mm width and depth fit standard worktop modules, while the 540 mm height clears most overhead cupboards and shelves.
Cleaning is straightforward: remove the drip tray, wash it in hot soapy water, and wipe the interior with a damp cloth. The stainless steel surface resists staining and can be sanitised with standard kitchen chemicals. Regular removal of fat from the tray prevents build-up and keeps the grill ready for the next service.
The SEH003 is a front-open salamander with a manually or automatically regulated cooking grid, designed for gratinating, grilling, and warming food in a professional kitchen.
