A salamander toaster uses overhead radiant heat from a quartz element to brown, crisp and finish dishes without turning them. The heat source sits above the food, so the surface glows and caramelises while the interior stays moist. This method is faster than a conventional grill because the heat travels in a straight line, concentrating energy where it is needed.
