A mobile holding station keeps batches of French fries warm and crisp between the fryer and the service counter. Three Philips heating lamps above a nine-row wire grid direct radiant heat downward, slowing moisture loss while preventing the fries from steaming. The grid and glass panel can be reversed to either side, letting the operator load from the left or right without reaching across hot surfaces.
The sequence begins by wheeling the trolley to the fryer. Once the first batch is drained, it is spread on the grid in a single layer. The on/off switch is pressed, energising the lamps. As each new batch emerges from the fryer, it is added to the grid; the lamps maintain surface temperature without further adjustment. A salt shaker is stored on the unit for seasoning at the point of holding. Below the grid, a removable fat-collecting pan catches any drips, keeping the workspace clean. When service is complete, the grid and pan are lifted out for washing.
The frame and all food-contact surfaces are stainless steel. A storage cupboard beneath the holding area provides space for trays, utensils or spare salt. Four wheels—two with brakes—allow the trolley to be locked in place at the fryer or moved to the pass without tilting. The 900 W power draw runs on a standard 230 V single-phase circuit, matching the supply used by most commercial fryers and ovens.
The 600 mm width and 700 mm depth fit between kitchen aisles and under standard worktops. At 1600 mm tall, the unit clears most doorways while keeping the lamps at eye level for easy monitoring. The 57 kg weight ensures stability during movement but remains manageable for one operator.
Cleaning follows the removable parts: the grid, glass panel and fat-collecting pan are washed in a sink or dishwasher. The stainless-steel cupboard and frame are wiped down with a damp cloth and sanitiser. The heating lamps require only occasional dusting with a dry microfibre cloth to maintain output.
