A twin-vat electric fryer designed for continuous frying in professional kitchens, the CASTA Lady 900 heats two separate 8 litre oil baths with independent high-performance elements. Each vat is pressed from a single sheet of stainless steel, eliminating seams where food particles or oil residue could collect. The fryer works by circulating electric current through sheathed resistors submerged in the oil; as the resistors heat, they transfer energy to the oil, raising its temperature evenly across the vat. A built-in thermostat monitors the oil temperature and cycles the elements on and off to maintain the set point, while a secondary safety thermostat cuts power if the oil exceeds a critical threshold, preventing overheating and fire risk.
To operate, the chef fills each vat with fresh oil, closes the magnetic door, and sets the thermostat to the required frying temperature. The orange indicator light confirms the unit is powered, and the green light shows the elements are heating. Once the oil reaches temperature, the green light cycles on and off to signal steady-state operation. The operator lowers the basket into the oil, and the food fries until the timer or visual check indicates it is done. After lifting the basket, excess oil drains back into the vat through the basket's perforations. A large, rounded expansion bowl above each vat catches any oil displaced by the basket, preventing spills onto the worktop. When frying is complete, the oil-discharge tap directs used oil through a stainless steel filter into a separate bowl, simplifying oil changes and cleaning.
The fryer is constructed from AISI 304 stainless steel throughout, including the 1.5 mm thick vat walls, the pressed top table, the magnetic door, and the adjustable legs. The sheathed resistors are secured with a rotating mount, allowing the operator to swing them out of the vat for thorough cleaning without tools. The chromate-brass discharge tap resists corrosion, and the stainless steel filter traps food particles before they enter the waste oil container.
The 14 kW power rating requires a 400 V three-phase circuit, the standard supply for heavy-duty catering equipment in commercial kitchens. The 400 mm depth, 900 mm width and 850 mm height create a compact footprint that fits against a wall or between other worktop appliances, while the 54 kg weight ensures stability without anchoring. The twin-vat configuration allows two different foods to be fried simultaneously at the same or different temperatures, or a single large batch to be split across both vats for faster throughput.
Cleaning involves rotating the resistors out of the vats, wiping down the interior surfaces, and rinsing the filter. The pressed single-piece vats have no corners or welds where grease can accumulate, and the rounded expansion bowls are designed to be wiped clean in a single pass. The magnetic door seals tightly to keep dust and debris out of the oil when the fryer is not in use.
