A vertical gas chicken grill rotates whole birds or joints on tubular spits above a gas flame, exposing every surface to radiant heat and hot air. The constant turning bastes the meat in its own juices, sealing the skin while keeping the inside moist. Independent control of each spit allows different cuts or recipes to cook at once without flavour transfer, making the grill suitable for mixed menus in compact spaces.
The operator loads each spit by skewering the product from top to bottom, securing it with the supplied forks. Once all eight spits are in place, the glass door is closed and the gas supply is opened. Individual switches start each motor, and the flame is lit. The operator sets the desired cooking time on the timer and monitors the process through the tempered glass door, adjusting the flame height if needed. When the timer sounds, the spits are stopped, the door opened, and the cooked product removed with heat-resistant gloves.
The grill is built from ribbed and reinforced stainless steel, chosen for its resistance to corrosion and thermal stress. A Low-E tempered glass door withstands the high temperatures inside while providing a clear view of the cooking process. The interior is lit by a 230 V lamp that improves visibility and highlights the product. A removable fat collection bucket beneath the spits catches drippings, simplifying cleaning and reducing fire risk.
Eight tubular stainless steel spits, 12 mm square and 760 mm long, are driven by separate 230 V motors. Each motor is controlled by its own switch, allowing any combination of spits to run at the same time. The 24 kW gas burner provides the heat needed for consistent results in small to medium-scale production.
The 230 V electrical supply powers the motors and interior lighting, requiring a single-phase circuit commonly found in professional kitchens. The 120 kg weight indicates a sturdy construction that remains stable on the worktop without additional anchoring. The footprint of 921 mm by 391 mm fits into tight kitchen layouts, while the 1556 mm height allows the operator to load and unload spits without bending.
After each service, the operator removes the fat collection bucket and empties it. The spits, forks and interior surfaces are wiped down with a damp cloth and mild detergent, then dried to prevent corrosion. The glass door is cleaned with a non-abrasive cleaner to maintain visibility. The stainless steel exterior can be polished periodically to retain its appearance.
