Kebab is becoming an increasingly popular dish worldwide, which is why foodservice venues are adding it more and more often to their menus. A gyros grill rotates vertical spits of stacked meat while exposing every surface to radiant heat. Nine independent heating elements surround the spit, each emitting infrared energy that sears the outer layer without drying the interior. The rotation ensures the meat cooks evenly on all sides, while the continuous exposure to heat creates the characteristic crisp crust and juicy centre that define gyros and kebabs.
The operator loads seasoned meat onto the vertical spit, secures it with the prongs, and positions the spit between the motorised hubs. Once the grill is switched on, the spit begins to turn, and the heating elements are energised. The operator sets the desired temperature and rotation speed using the front-mounted controls, then monitors the cooking process through the glass observation panel. When the meat reaches the correct internal temperature, it is sliced directly from the rotating spit onto serving plates or into pita bread.
The GHIV2 is built from stainless steel throughout, including the outer casing, drip tray and spit assembly. The heating elements are housed in protective shrouds that direct heat towards the meat while shielding the operator from direct exposure. A removable drip tray collects rendered fat and juices, simplifying the cleaning process after service.
The grill is controlled by a rotary temperature dial and a separate rotation-speed selector. The temperature dial adjusts the output of the nine heating elements, allowing the operator to fine-tune the cooking intensity. The rotation-speed selector sets how quickly the spit turns, which determines how frequently each portion of meat passes in front of the heating elements.
The 9 kW power rating indicates the total electrical load the grill draws when all nine elements are operating at full capacity. This requires a dedicated 400 V three-phase circuit, the standard supply for professional catering equipment in commercial kitchens. The 453 mm width, 580 mm depth and 966 mm height define the footprint the grill occupies on the worktop, allowing it to fit into tight spaces while still accommodating a full-sized vertical spit.
After each service, the operator removes the drip tray and washes it separately. The stainless steel casing and heating-element shrouds are wiped down with a damp cloth and mild detergent. The spit and prongs are detached and cleaned in the sink or dishwasher. Regular inspection of the heating elements ensures they remain free of grease build-up, which can affect heat distribution and efficiency.
