A salamandra grill directs intense overhead heat downward onto food, browning, grilling or finishing dishes without turning them. The heat source sits above a adjustable grid, concentrating radiant energy for quick searing, melting cheese or holding plates at temperature. Because the heat comes from above, the food does not need to be flipped, and the process stays even across the entire surface.
The operator loads the food onto the grid, sets the height with the automatic adjustment system, and starts the grill.
