Salamandra grill — fast, even cooking with professional durability and perfect results
An overhead salamandra grill directs intense radiant heat from above, browning, glazing or finishing dishes without turning them. The grill's element or burner sits in the roof of the unit, concentrating heat downward onto the food below. This method gives rapid, even colour and texture to meats, fish, vegetables and gratins, while keeping the interior moist. Because the heat source is fixed above, the operator controls the cooking by adjusting the distance between the food and the element, rather than flipping or stirring.
The Elangrill Salamandra CM 9 follows this principle with an automatic grid that moves up and down at the touch of a control. The operator places the food on the grid, sets the height, and starts the grill. Interior lighting lets the chef watch the browning without opening the door and losing heat. A removable fat collection tray catches drips, keeping the worktop clean and reducing flare-ups. A second removable tray beneath the grid makes it simple to switch between grilling and holding modes, or to clean the interior after service.
Construction is stainless steel throughout, chosen for resistance to corrosion and high temperatures. The supporting frame is designed for stability on a worktop or counter, while the interior surfaces are polished for easy wiping. The fat tray and support tray slide out on rails, so they can be washed separately in a sink or dishwasher.
The grill is available in gas or electric versions. The gas model connects to a standard catering gas supply, while the electric model requires a 400 V three-phase circuit. Both models share the same footprint and controls, so the kitchen can choose the energy source without changing layout or workflow.
Controls consist of a height adjustment dial for the grid, a power switch, and a temperature control for the electric model or a gas valve for the gas model. The interior light is switched separately, so it can be left on for monitoring or turned off to save energy.

Daily cleaning involves removing the fat tray and support tray, wiping the interior with a damp cloth, and emptying the fat collection container. The stainless steel surfaces can be sanitised with standard kitchen chemicals, and the light cover is removable for dusting. The grid itself is dishwasher-safe, so it can be cleaned alongside other kitchen utensils.
