A warm cabinet that harnesses the residual heat of a charcoal oven to keep cooked food at serving temperature without additional power. The unit sits directly above the oven, capturing rising warmth and circulating it around the interior. This passive system prevents food from cooling while waiting to be plated, maintaining texture and moisture for short-term holding in busy service periods.
The cabinet operates without controls or electricity. Heat from the charcoal oven below enters through the base, rises naturally and envelops the food trays. No fans or elements are used, so the warmth is gentle and even, avoiding hot spots that could overcook or dry the food. The method relies on the steady output of a charcoal oven, making it suited to kitchens where the oven runs continuously during service.
Food is loaded and removed through hinged doors or an open front, depending on the model. Trays or plates slide in and out on runners, allowing staff to access portions quickly without disturbing others. The design keeps the workflow smooth during peak service, reducing the need to reheat or hold food in less efficient ways.
The cabinet is built from stainless steel, chosen for its resistance to heat and moisture. The material does not corrode, warp or discolour under the constant warmth, and its smooth surfaces allow easy cleaning with standard kitchen detergents and cloths. No special maintenance is required beyond wiping down after each service to remove any food debris or grease.
