Professional electric boiling kettle with indirect electric heating, designed for preparing large quantities of food. Equipped with an automatic hydraulic tank tilting system, safety thermostat, and double-jacket water level control system. Indirect heating ensures even heat distribution and reduces the risk of food burning.
This electric boiling kettle uses an indirect heating method. A water-filled jacket surrounds the inner vat, with electric elements warming the jacket water. Heat transfers evenly to the cooking chamber without direct contact, preventing hot spots and reducing the risk of burning. This approach allows precise temperature control, suitable for delicate or acidic ingredients such as sauces, soups, and fruit preserves.
The 100-litre inner vat is loaded through a balanced stainless-steel lid. The jacket is filled to the marked level using a chrome-plated bronze mixer tap. An adjustable control sets the power, initiating heating. A pressure gauge monitors jacket pressure, while a manual air-release valve vents excess pressure during operation. A safety valve activates automatically if pressure reaches a set limit. Once the contents reach the desired temperature, a hydraulic tilt system lowers the vat smoothly for decanting, and power to the elements cuts out during tilting.
The inner cooking vat is constructed from corrosion-resistant stainless steel, with the jacket walls and base made of a different grade of stainless steel. These form a double-walled chamber holding the heating water. The outer cladding features a satin finish, and the supporting frame and legs are made of stainless steel. High-density ceramic-fibre insulation between the jacket and outer skin minimises heat loss.
Controls include an adjustable power dial, a pressure gauge, a manual air-release valve, a safety valve, and a chrome-plated bronze mixer tap for hot and cold water. A safety thermostat prevents overheating or low water levels, while dual-level taps indicate jacket water levels with automatic refill capability.
The kettle operates on a 400 V three-phase 50 Hz supply. Its weight requires placement on a solid floor or reinforced surface. The unit occupies a fixed space, and the hydraulic tilt mechanism needs clearance in front for safe operation.
Cleaning involves draining the jacket through the mixer tap, wiping the inner vat and lid with non-abrasive cleaners, and polishing the satin-finished outer skin. The ceramic-fibre insulation must remain dry; any spills should be wiped immediately.
