Professional gas boiling kettle with direct gas heating, designed for preparing large quantities of food. The automatic hydraulic tank tilting system facilitates easy removal and transfer of the finished product. Equipped with high-performance stainless steel tubular burners, manual piezoelectric ignition and a pilot flame.
A gas boiling kettle heats liquids by burning gas under a sealed inner vessel, transferring the heat through the metal walls into the contents. The direct flame from stainless-steel tubular burners raises the temperature quickly and evenly, while a ceramic-fibre insulation layer keeps the outer casing cool and reduces heat loss. This method gives high thermal efficiency and precise control over the cooking process, making it suitable for large batches of stocks, sauces, soups and acidic products such as fruit purées or pickling brines.
The operator loads the 300 L inner bowl through the hinged lid, which is counterbalanced for easy opening. A manual air-release valve on the double-walled jacket prevents pressure build-up during heating. Once the contents reach the desired temperature, the operator can engage the adjustable chrome-plated bronze mixer to circulate hot or cold water through the jacket, maintaining or lowering the temperature as needed. When cooking is complete, the hydraulic tilt system lowers the bowl smoothly, emptying the contents without manual lifting. An automatic safety interlock cuts the gas supply during tilting, preventing accidental ignition.
The inner bowl is fabricated from 20/10 to 40/10 mm AISI 316 stainless steel, chosen for its resistance to corrosion by acidic ingredients. The side walls and lid are AISI 304 stainless steel in 20/10 to 25/10 mm and 15/10 mm thicknesses respectively. A dual-scale pressure gauge monitors the jacket pressure, and a safety valve set at 0.5 bar prevents over-pressurisation. The supporting frame and outer cladding are 30/10 mm and satin-finished AISI 304 stainless steel, mounted on a sturdy base.
Controls include a manual piezo-electric ignition with a pilot light, a gas cock with built-in safety valve and thermocouple, and a flue-gas outlet grille. The 39.4 kW power rating indicates the gas load the appliance places on the supply, while the 230 V single-phase connection powers the hydraulic pump and control circuit. The 410 kg weight requires a solid floor and may need specialist handling equipment for installation. The 1960 x 1325 x 1300 mm footprint dictates the space allocation on the kitchen floor, including clearance for the flue and service access.
Cleaning involves draining the bowl, rinsing with warm water, and scrubbing with non-abrasive pads. The lid, mixer and air-release valve should be removed and cleaned separately. The ceramic-fibre insulation should be inspected periodically for integrity, and the gas burners checked for blockages. The hydraulic tilt mechanism requires occasional lubrication of the pivot points.
