A professional refrigerator built for high-volume kitchens, the FAGOR AUP-22G uses off-cycle defrost to maintain a steady 0 to 8 °C without manual intervention. Instead of a heating element, the compressor stops periodically, allowing any frost to melt naturally from the evaporator coils. This method keeps the cabinet drier, reduces energy spikes and eliminates the risk of accidental overheating that can come with electric defrost systems. The unit is loaded through two full-height doors, each fitted with an ergonomic handle and an automatic closer to minimise cold-air loss. Inside, six removable epoxy-coated shelves accept GN 2/1 gastronorm pans, giving chefs a standardised way to organise ingredients, prepped dishes or bulk storage. The forced-air circulation system pushes cold air evenly across every shelf, so temperature remains uniform from top to bottom and front to back. Operation is controlled from an electronic panel with a large digital display. The user sets the target temperature within the 0–8 °C range, and the system adjusts compressor speed and fan output to hold it. An ECO mode reduces energy use during quieter periods, while the built-in HACCP logger records up to ten temperature alarms or power interruptions, providing a traceable record for food-safety audits. For remote oversight, the refrigerator can connect to Fagor Konnect, allowing kitchen managers to monitor performance and receive alerts without entering the cold room. The entire cabinet is constructed from AISI 304 stainless steel, inside and out, for corrosion resistance and easy cleaning. Rounded interior corners and sloped surfaces prevent dirt traps, and an integrated drainage channel collects defrost water for quick removal. The 80 mm-thick polyurethane insulation reduces thermal bridging, so the unit holds temperature even when doors are opened frequently during service.
