Professional freezer designed for pastry trays, made of stainless steel with forced-air circulation, ensuring a uniform temperature of -18…-22 °C throughout the cabinet. The unit is suitable for EN 600 × 400 mm pastry and bakery trays. Equipped with electronic control and LED lighting. Defrosting is performed using an electric defrost system. Capacity – 574 L.
A freezer built to hold standard EN 600 × 400 mm pastry and bakery trays in a single, full-height cabinet. The refrigeration system removes heat from the air inside, lowering the temperature to between -18 °C and -22 °C. At these levels, moisture in the food freezes solid, stopping bacterial growth and preserving texture, flavour and shelf life for weeks. A fan circulates the cold air continuously, ensuring every tray receives the same temperature regardless of its position in the cabinet.
The operator loads the trays onto the adjustable guides, sets the desired temperature on the electronic control panel, and closes the door. An electric defrost cycle runs automatically, melting any ice that forms on the evaporator coils without manual intervention. LED lighting switches on when the door opens, illuminating the entire interior so trays can be located quickly. The guides are spaced to accept up to twenty trays, and each guide can be repositioned or removed to create taller gaps for larger items.
The cabinet is constructed from stainless steel inside and out, chosen for its resistance to corrosion and ease of cleaning. A 50 mm layer of insulation surrounds the storage space, reducing heat transfer from the kitchen and maintaining a stable internal temperature. The floor is fitted with adjustable legs, allowing the unit to be levelled on uneven surfaces or raised to a comfortable working height between 130 mm and 200 mm.
The electronic control panel displays the current temperature and allows the operator to set the target value within the -18 °C to -22 °C range. A single-phase electrical supply of 220-240 V at 50 Hz is required, drawing a cooling power of 0.364 kW. The refrigerant used is R290, a hydrocarbon with low environmental impact.
The 574 L volume provides space for approximately twenty standard pastry trays, while the 760 mm width and 729 mm depth fit into most professional kitchen layouts without obstructing walkways. The 170 kg weight means the unit is moved with a pallet truck or similar equipment rather than lifted by hand.
Cleaning involves wiping down the stainless steel interior and exterior with a damp cloth and mild detergent, removing and washing the tray guides separately, and occasionally defrosting the evaporator coils if ice build-up is noticed. The removable guides simplify this process, as they can be taken out and cleaned in a sink.
