Professional freezer made of AISI 304 stainless steel with forced-air circulation, ensuring a uniform temperature of -18…-22 °C throughout the cabinet. Equipped with electronic controls and LED lighting; defrosting is performed using a hot gas defrost system, ensuring fast, efficient and stable operation.
A professional freezer built for high-volume kitchens, the FAGOR CUN-24G uses forced-air circulation to draw heat out of stored goods and maintain a steady low temperature. Cold air is pushed through the cabinet by a fan, spreading evenly across every shelf and corner. This continuous flow prevents warm spots and keeps frozen items at a uniform temperature, preserving quality over long storage periods. The system is designed to handle frequent door openings without losing performance, making it suitable for busy environments where stock is accessed throughout the day.
Loading the freezer begins with adjusting the shelves to the required height. The cabinet accepts GN 2/1 gastronorm trays and containers, which slide onto epoxy-coated racks. Each shelf can be set at 55 mm increments, allowing the interior to be reconfigured for different product sizes. Once the shelves are positioned, items are placed directly on the racks or inside the trays. The doors are closed, and the electronic control panel is used to set the target temperature between -18 °C and -22 °C. The freezer then maintains this range automatically, with the fan running continuously to circulate cold air.
Defrosting is carried out by a hot gas system, which reverses the refrigeration cycle to melt ice build-up on the evaporator coils. This process is initiated manually or automatically, depending on the control settings, and does not require the freezer to be emptied. The melted ice drains through an integrated system, preventing water from pooling inside the cabinet. After defrosting, the freezer returns to normal operation without a rise in internal temperature.
The cabinet is constructed from AISI 304 stainless steel inside and out, with a 60 mm layer of high-density polyurethane insulation between the inner and outer walls. This insulation reduces cold loss and helps maintain a stable temperature, even in warm kitchen environments. The interior features rounded corners and a sloped drainage system, which simplify cleaning and reduce the risk of contamination. The exterior is finished in food-grade stainless steel, resistant to corrosion and easy to wipe down.
Four doors, each with magnetic seals and ergonomic handles, provide access to the interior. The doors are hinged to open fully, allowing unobstructed loading and unloading of large trays. Adjustable stainless steel legs raise the cabinet between 130 mm and 200 mm off the floor, making it easier to level the unit and clean underneath. The legs are lockable to prevent movement during use.
The control panel includes a digital display and buttons for setting the temperature, initiating defrost cycles, and monitoring the freezer's status. The display shows the current internal temperature, while the buttons allow the operator to adjust settings without opening the doors. LED lighting inside the cabinet illuminates the shelves, improving visibility of stored items.
The 1186 litre volume provides ample space for bulk storage, while the 300 kg weight indicates a sturdy construction capable of supporting heavy loads. The 0.907 kW cooling power reflects the unit's ability to maintain low temperatures in a large cabinet, and the 220-240 V single-phase supply is standard for professional kitchen equipment. The freezer operates on R290 refrigerant, a hydrocarbon with low environmental impact, and is rated E for energy efficiency.
Shelves are removable and adjustable, with each supporting up to 40 kg. The epoxy coating protects the metal from corrosion and makes the shelves easier to clean. The cabinet's footprint of 1318 mm by 842 mm fits into standard kitchen layouts, while the 2040 mm height allows for vertical storage without requiring excessive floor space.
Cleaning involves wiping down the interior and exterior with a damp cloth and mild detergent. The rounded corners and integrated drainage system prevent water from pooling, and the removable shelves can be taken out for thorough washing. The hot gas defrost system reduces the need for manual defrosting, but the evaporator coils should be checked periodically to ensure they remain free of ice build-up.
