Professional freezer made of AISI 304 stainless steel with forced-air circulation, ensuring a uniform temperature of -18…-22 °C throughout the cabinet. Equipped with electronic controls and LED lighting; defrosting is performed using a hot gas defrost system, ensuring fast, efficient and stable operation.
A professional freezer built for high-volume kitchens, the FAGOR CUN-11G uses a refrigeration cycle that circulates refrigerant R290 to pull heat from the cabinet and expel it outside. The compressor raises the refrigerant pressure, turning it into a hot gas that then condenses in the condenser coil, releasing the absorbed heat. As the refrigerant expands through the evaporator inside the cabinet, it cools rapidly, lowering the air temperature to the set range. Hot gas defrost reverses the cycle briefly: warm refrigerant is sent directly to the evaporator, melting any ice build-up without raising the cabinet temperature above freezing. This method restores full cooling capacity quickly and avoids the need for electrical heating elements.
The operator loads GN 2/1 gastronorm trays or bulk items onto the three epoxy-coated shelves, each adjustable in 55 mm increments across 23 positions. The single door is opened only when necessary; the magnetic seal and 60 mm polyurethane insulation minimise cold-air loss. An electronic control panel sets the target temperature between -22 °C and -18 °C, while an internal LED light illuminates the load for quick stock checks. Once the door is closed, the forced-air system circulates cold air evenly throughout the 543 litre volume, maintaining a stable environment for frozen goods.
The cabinet is constructed from AISI 304 stainless steel inside and out, with rounded internal corners and an integrated drainage channel to simplify cleaning. The exterior door handle is ergonomic and recessed, reducing the risk of accidental opening. Adjustable stainless-steel legs allow the unit to be levelled between 130 mm and 200 mm, accommodating uneven floors or under-counter clearance for cleaning.
The 0.535 kW cooling power reflects the load the freezer places on the electrical supply, while the 152 kg weight indicates that the unit is designed to be moved with a pallet truck or trolley rather than carried by hand. The 653 mm width fits through standard kitchen doorways and aligns with other GN 2/1 equipment, allowing seamless integration into a professional worktop layout.
Cleaning involves removing the three shelves, wiping down the interior with a damp cloth and mild detergent, and rinsing the drainage channel. The hot gas defrost system eliminates manual scraping of ice, reducing daily maintenance time. The exterior stainless steel surfaces can be polished with a non-abrasive cleaner to maintain appearance.
