Professional gas boiling kettle with direct gas heating, designed for preparing large quantities of food. The automatic hydraulic tank tilting system facilitates easy removal and transfer of the finished product. A gas boiling kettle heats liquids by burning gas beneath a sealed vessel, transferring energy through the base and walls. The direct flame raises the temperature quickly, while the enclosed space traps steam, building pressure that accelerates cooking. This method is used for stocks, soups, sauces and large batches of vegetables, where even heat and rapid boiling reduce cooking times and preserve flavour. The kettle's double-walled construction holds the heat, and the pressure inside the jacket speeds the process without scorching the contents.
The operator loads the kettle through the hinged lid, then ignites the gas with the piezo-electric starter. A pilot flame keeps the main burner alight, and the control knob adjusts the gas flow to set the boil. The built-in agitator mixes hot and cold water feeds, preventing temperature shock when adding liquids. During cooking, the pressure gauge on the jacket shows the internal steam level, and the manual air release valve vents excess pressure. When the batch is ready, the hydraulic tilting system lowers the kettle forward, pouring the contents through the lip without lifting. An automatic cut-off stops the gas supply while the kettle is tilted, preventing accidental ignition.
The inner vat is made of AISI 316 stainless steel, chosen for resistance to acidic foods such as tomato sauces and pickles. The walls and lid are AISI 304 stainless steel, with the lid balanced by springs for easy opening. A safety valve on the jacket releases at 0.5 bar, protecting against over-pressure. The outer jacket and supporting frame are also stainless steel, with a satin finish that resists fingerprints and scratches. High-density ceramic fibre insulation between the walls reduces heat loss and keeps the outer surface cool.
Controls include the gas control knob with a safety valve and thermocouple, the piezo-electric igniter, the pressure gauge, the manual air release valve, and the hydraulic tilting lever. The 55.4 kW power rating reflects the load on the gas supply, requiring a dedicated line and proper ventilation. The 505 kg weight means the unit is floor-standing and must be positioned on a level, reinforced surface. The 2050 x 1475 x 1300 mm footprint determines the space it occupies on the worktop or floor, including clearance for the tilting mechanism and gas exhaust.
Cleaning involves scrubbing the inner vat with non-abrasive pads and food-safe detergents, then rinsing with the agitator to flush out residue. The lid, pressure gauge and air release valve are wiped down, and the ceramic fibre insulation is vacuumed to remove dust. The gas burners and exhaust grille are brushed to clear soot, and the hydraulic system is checked for leaks. The stainless steel surfaces are dried to prevent water spots, and the safety valve is tested periodically.
