Professional gas boiling kettle with indirect gas heating, designed for preparing large quantities of food. A gas boiling kettle heats liquids indirectly through a double-walled chamber, where gas burners transfer heat to water or steam circulating between the walls. This method prevents direct flame contact with the cooking vessel, eliminating hot spots and reducing the risk of scorching. The heat spreads evenly around the inner kettle, maintaining consistent temperatures for large volumes of stock, sauces or soups. Indirect heating also allows precise control over the cooking process, making it suitable for delicate or acidic ingredients that require gentle treatment.
To operate the MCBIG-500, the operator fills the inner kettle with the required liquid, then closes the counterbalanced lid. The gas supply is opened, and the pilot light is ignited manually using the piezoelectric starter. The burners heat the water jacket between the double walls, gradually raising the temperature of the contents. A pressure gauge monitors the steam pressure in the jacket, while a manual air release valve prevents excess build-up. If pressure exceeds safe limits, a safety valve set at 0.5 bar automatically vents steam. A chrome-plated bronze mixer tap supplies hot and cold water for adjusting consistency or temperature during cooking. Once the process is complete, the hydraulic tilting system lowers the kettle to decant the contents, with an automatic shut-off ensuring the burners extinguish during tilting for safety.
The 500 litre capacity allows bulk preparation of stocks, sauces or stews in a single batch, reducing the need for multiple smaller vessels. The 55.4 kW power rating indicates a high gas load, requiring a dedicated supply line in a commercial kitchen. Cleaning involves draining the kettle, then rinsing the inner surface with water from the mixer tap. The hydraulic tilting system allows full access for scrubbing, while the smooth stainless steel surfaces prevent food residue from adhering. The ceramic fibre insulation should be checked periodically for damage, though it requires no routine maintenance. The gas burners and flue require occasional inspection to ensure unobstructed airflow and efficient combustion.
