A direct gas boiling kettle heats liquids rapidly by transferring flame energy straight through the base of the vessel. Gas burners beneath the kettle generate intense heat, which conducts through the stainless steel walls into the contents. This method eliminates the delay of an intermediate heating medium, allowing faster temperature rise and immediate response to adjustments. The cylindrical shape promotes even heat distribution, preventing hot spots that can scorch food or cause uneven cooking. Pressure builds within the double-walled construction during heating, which the operator monitors and releases as needed to maintain safe operation and consistent results.

To begin, the operator fills the kettle with water or stock through the tap with a movable hose. Ingredients are added directly into the vessel, and the lid is closed to retain heat and steam. The gas supply is opened, and the manual piezo ignition lights the pilot flame, which then ignites the main burners. The operator sets the flame level to control the rate of heating, watching the manometer to track internal pressure. When the contents reach the desired temperature, the flame is reduced or turned off, and the lid is opened to add further ingredients or stir the mixture. Once cooking is complete, the kettle is drained through the front-mounted tap with an insulated, heat-resistant handle, directing the contents into serving containers or holding tanks.

The 300 L capacity allows large batches of soups, stocks, sauces or stews to be prepared in a single cycle, reducing the need for multiple smaller vessels. The piezo ignition provides a spark to light the pilot flame without an external source, and the flue grid directs combustion gases safely away from the cooking area.

Cleaning involves draining the kettle completely, then rinsing the interior with warm water and a non-abrasive cleaner to remove food residues. The lid and tap should be wiped down, and the exterior polished with a stainless steel cleaner to maintain the satin finish. The gas burners and flue grid require periodic inspection to ensure they are free from blockages or grease build-up, which can affect performance and safety.
