Professional gas boiling kettle with a cylindrical cooking tank and indirect heating, designed for preparing large quantities of food. The cylindrical construction with rounded surfaces facilitates cleaning. Indirect gas heating means that the heat generated by the gas burners heats the water inside the double wall, producing steam that evenly transfers heat to the cooking tank, ensuring gentle heating of the products and reducing the risk of burning. Heating is provided by high-performance tubular stainless steel gas burners.
This gas-fired boiling kettle uses indirect heating via a sealed water jacket around the inner vat. A gas burner heats a tubular heat exchanger beneath the vat, warming the jacket water, which then transfers heat evenly to the contents.
The operator fills the cylindrical vat through a swing-arm tap and closes the balanced hinged lid. A piezo ignition system lights the pilot and main burner. A manometer on the front panel displays jacket pressure, whilst a manual air-release valve vents excess steam during heating. The insulated jacket minimises heat loss, enabling prolonged simmering without constant burner adjustment. For emptying, the operator opens the insulated drain cock at the front, directing the liquid through a flexible hose into containers.
The inner vat is made from AISI 316 stainless steel, offering high corrosion resistance, particularly against acidic ingredients. The jacket walls and outer skin are constructed from AISI 304 stainless steel with a satin finish for durability and ease of cleaning. The lid, also AISI 304 stainless steel, features a heat-resistant handle and counter-balance springs for effortless operation. The unit stands on adjustable stainless-steel legs, allowing levelling on uneven surfaces.
A 39 kW gas burner requires a dedicated gas line. The 200 litre capacity supports large-batch production, whilst the dimensions ensure compatibility with standard worktop layouts. The robust, fully welded frame must be placed on a solid or reinforced base.
Daily maintenance includes flushing the inner vat with hot water and detergent, wiping the satin-finished outer surfaces, and disassembling the drain cock and swing-arm tap for descaling. Regular inspection of the pressure gauge and air-release valve ensures safe operation. Keep the high-density insulation dry to maintain thermal efficiency.
