Professional gas boiling kettle with a rectangular Gastronorm cooking tank and direct heating, designed for preparing large quantities of food. Direct gas heating means that the heat generated by the gas burners is transferred directly to the cooking tank, ensuring rapid heating of the products. Heating is provided by high-performance tubular stainless steel gas burners.
This gas boiling kettle uses a high-efficiency burner positioned beneath the vessel to heat liquids directly. The double-walled design creates a pressurised jacket between the inner and outer layers, ensuring even heat distribution and preventing hot spots. This method allows uniform cooking of large quantities of stock, soup, or sauce while reducing energy consumption once the desired temperature is achieved.
Operation begins by connecting the gas supply and selecting the appropriate injector for the local gas type. The pilot light is ignited manually using piezoelectric ignition, followed by opening the main gas valve. Cold water fills the vessel through an adjustable chrome-plated bronze tap. The counterbalanced lid, equipped with a heat-resistant handle, is closed to minimise steam loss. During heating, the manometer displays jacket pressure, and excess pressure can be released via the manual air-release valve. A safety valve set to 0.5 bar prevents over-pressurisation. After reaching the target temperature, the burner can be turned down or off, with the insulated jacket retaining heat efficiently. The front-mounted tap, featuring an insulated handle, is used for draining the contents.
With a 35 kW power rating, the unit requires a dedicated high-capacity gas line in professional kitchens. Its 280-litre capacity supports bulk preparation, reducing the need for multiple smaller vessels. The 220 kg weight necessitates placement on a stable, load-bearing surface, while adjustable stainless-steel legs allow levelling on uneven floors. The 1400 x 900 x 850 mm dimensions demand careful kitchen layout planning to ensure operator access.
The inner vessel is constructed from AISI 316 stainless steel, offering corrosion resistance and durability. The outer walls and lid are made of AISI 304 stainless steel, with a satin-finished exterior casing of the same material. High-density insulation between the walls reduces heat loss, keeping the outer surface cooler and improving energy efficiency. The front-mounted pressure gauge and manual air-release valve enable easy monitoring, while the gas control includes a safety shut-off valve and thermocouple to cut the supply if the flame extinguishes.
Cleaning involves draining the vessel through the tap and rinsing with warm water. The smooth stainless-steel surfaces simplify residue removal, and the lid and tap components can be detached for thorough cleaning. The burner assembly and flue grid should be cleared of carbon deposits to maintain efficiency, and the pressure safety valve should be checked periodically.
