A display refrigerator built for professional kitchens, the FAGOR MONOBLOCK GN 2/1 keeps chilled food visible while maintaining a stable temperature between 0 and 8 °C. Instead of a remote condenser, the cooling system is self-contained in a single unit mounted on the top of the cabinet. This monoblock design eliminates the need for external piping, simplifying installation and freeing up space beneath the worktop for cleaning or storage.
The refrigerator cools by circulating cold air through a forced-air system. A fan draws air across an evaporator coil, lowering its temperature before pushing it evenly throughout the cabinet. This continuous airflow prevents hot spots and ensures every shelf receives the same level of cooling, preserving food quality and safety. When the set temperature is reached, the compressor stops, and the unit enters an off-cycle defrost phase. During this period, any frost that has formed on the evaporator melts naturally, avoiding the need for a separate heating element and reducing energy use.
To load the refrigerator, the operator slides open the double-glazed door, which is designed to minimise heat transfer while providing a clear view of the contents. Three removable epoxy-coated shelves, sized for GN 2/1 gastronorm trays, can be adjusted in 60 mm increments across 23 possible positions. This flexibility allows the interior to be reconfigured for different product heights, from shallow trays of desserts to taller containers of prepared dishes. Once loaded, the door is closed, and the electronic control panel is used to set the desired temperature. A digital display shows the current reading, while an integrated HACCP monitoring system logs temperature data for compliance records.
The cabinet is constructed from stainless steel, inside and out, chosen for its resistance to corrosion and ease of cleaning. The exterior finish withstands the wear of a busy kitchen, while the interior surfaces are smooth and seamless, reducing the risk of bacterial growth. A 60 mm layer of insulation surrounds the cabinet, helping to maintain the internal temperature and reduce energy consumption. The base is fitted with adjustable legs, which can be set between 130 mm and 200 mm to level the unit on uneven floors and allow access for cleaning underneath.
With a total volume of 572 litres, the refrigerator provides ample space for displaying chilled products without overcrowding. Its footprint of 653 mm by 796 mm fits into standard kitchen layouts, while the 1996 mm height allows it to be positioned beneath worktops or in open display areas. The unit weighs 130 kg, which requires two people to move safely, and is designed to be positioned against a wall or integrated into a counter run.
The cooling power of 0.274 kW is sufficient for maintaining the temperature range in a controlled environment, while the B energy efficiency class indicates moderate power consumption for its size. The refrigerant used is R600a/R290, a hydrocarbon blend that has a lower environmental impact than older refrigerants. A separate version with a 0.398 kW cooling capacity is available for 60 Hz electrical supplies.
Cleaning is straightforward due to the removable shelves and the monoblock cooling system. The shelves can be taken out and washed separately, while the interior surfaces are wiped down with a damp cloth. The evaporator is accessible from the top of the unit, allowing for periodic checks and cleaning to maintain efficiency. The exterior stainless steel can be cleaned with standard kitchen sanitising solutions, and the door seals should be inspected regularly to ensure they remain intact and free from debris.
