Professional gas boiling kettle with indirect heating, designed for preparing large quantities of food. Equipped with an automatic product mixing system with adjustable operating speed and PLC touchscreen control, supporting up to 100 customizable cooking programs. Gas heating is provided by high-performance AISI 304 stainless steel tubular burners.
This 300 litre indirect gas boiling kettle uses a sealed water jacket to transfer heat evenly around the cooking vat. By avoiding direct flame contact, it eliminates hot spots and scorching, enabling accurate temperature management for stocks, sauces, soups, and large quantities of vegetables or pasta. The jacket also functions as a pressure vessel, increasing the boiling point of the water inside to accelerate heat transfer to the food.
The user fills the vat through the top inlet, selects the required temperature and stirring speed on the PLC touchscreen, and initiates the programme. A pilot light ignites the main burner, heating the water in the jacket until the set temperature is achieved. The stirrer, equipped with Teflon-ceramic paddles, rotates at an adjustable speed to prevent food from sticking and ensure uniform cooking. A manometer monitors the pressure within the jacket, which can be manually released via a valve if necessary. Upon completion of the cooking cycle, a yellow indicator light signals readiness, allowing the operator to cool the contents using the hot and cold water taps or drain the vat through the bottom valve.
The inner vat is made from AISI 316 stainless steel, selected for its resistance to corrosion and durability under repeated heating and cooling. The outer jacket and lid are constructed from AISI 304 stainless steel with a satin finish for straightforward cleaning. A safety valve set at 0.5 bar prevents excessive pressure build-up, while a gas cock with piezo ignition and a pilot burner ensures reliable operation. The stirrer's shaft and arms are stainless steel, and the paddles are Teflon-ceramic to facilitate easy removal of food residue.
The PLC touchscreen supports up to 100 customisable cooking programmes, each storing parameters such as temperature, stirring speed, hold times, and water fill levels. An audible alarm and red warning light alert the operator to any faults, while a water-level sensor prevents the jacket from running dry. The unit is mounted on adjustable feet within a stainless-steel frame, allowing it to be levelled on uneven surfaces and positioned at a convenient working height.
A gas burner with a 35.75 kW output connects to a standard catering gas line, making it suitable for large kitchens with existing gas infrastructure. The 400 V three-phase electrical supply powers the PLC, stirrer motor, and control circuits. The unit weighs 700 kg, requiring a reinforced floor and equipment such as a trolley or pallet truck for movement. Its dimensions of 1874 mm wide by 1650 mm deep fit within a standard worktop layout but necessitate adequate overhead clearance for the hinged lid and ventilation for flue gases.
Cleaning involves draining the vat, removing the Teflon-ceramic paddles, and scrubbing the inner surfaces with a non-abrasive pad. The jacket is flushed through the drain valve, and the outer panels are wiped with a damp cloth. The PLC touchscreen should be cleaned with a soft, dry microfibre cloth to protect the display.
