| NOTES | Directly pressure heated gas |
Professional autoclave gas boiling kettle with direct heating. The tank of the autoclave version can be hermetically sealed. During cooking, pressure builds up inside the tank, allowing the cooking temperature to be increased and accelerating the thermal processing of food. Gas heating is provided by high-performance stainless steel tubular burners. Heat from the gas burners is transferred directly to the bottom of the cooking tank.
A gas boiling kettle heats liquid directly under pressure, raising the boiling point to cook large batches faster and more evenly than an open pot. The sealed vessel traps steam, increasing internal pressure and temperature so stocks, soups and sauces reach readiness in less time while retaining moisture and flavour. This method also reduces energy waste, as the heat stays inside the kettle rather than escaping into the kitchen air. The MRG-300 A is loaded through a hinged lid sealed with a silicone gasket and locking clamps. Once the 300 L cooking vessel is filled, the operator ignites the gas burners with a piezo spark and pilot flame. The high-efficiency tubular stainless steel burners fire beneath the vessel, transferring heat through its AISI 316 base. A safety valve set to 0.05 bar releases excess pressure automatically, while a thermocouple and gas shut-off valve cut the supply if the flame fails. The front-mounted insulated drain tap allows the finished product to be drawn off without risk of scalding. Construction centres on a cylindrical cooking vessel of AISI 316 stainless steel in the base and AISI 304 in the walls, both thick enough to resist warping under repeated heating cycles. The outer shell and worktop are satin-finished AISI 304, while adjustable-height legs raise the unit to a comfortable working level. A flue grille at the rear vents combustion gases safely away from the cooking area. Controls are minimal and robust: a gas supply tap with built-in safety valve, a piezo ignition button, and the insulated drain tap. The 39 kW power rating indicates the load on the gas line, requiring a commercial-grade supply and proper ventilation. The 300 kg weight means the kettle must be positioned on a solid floor or reinforced worktop before use. Its 1200 x 1270 x 900 mm footprint dictates the space it occupies, typically against a wall or within a bank of modular catering equipment. The thick, seamless stainless-steel cooking vessel and satin-finish outer panels shed food residue and steam condensate, so the kettle can be wiped down between batches without scrubbing or disassembly. The AISI 316 and 304 stainless steel surfaces can be scrubbed with non-abrasive cleaners without risk of corrosion. The silicone gasket and locking clamps on the lid should be inspected regularly for wear and replaced if they no longer seal tightly. The drain tap and flue grille must be kept free of debris to ensure safe operation. The burners and combustion chamber require periodic brushing to remove carbon deposits and maintain efficiency. The MRG-300 A is the autoclave version, designed for sealed-pressure cooking. It is a standalone unit but can be integrated into a larger kitchen suite alongside other FAGOR professional appliances. This model fits commercial kitchens requiring high-volume liquid cooking under controlled pressure, where gas is the preferred fuel source.
