Professional gas boiling kettle with direct heating, designed for preparing large quantities of food. Rectangular construction with a cylindrical cooking tank. Gas heating is provided by high-performance stainless steel tubular burners. The unit is equipped with manual piezoelectric ignition with pilot flame and a smoke extraction grille.
A gas boiling kettle heats liquids directly with high-output burners beneath a sealed cylindrical vessel, transferring energy through the base into the contents. This method raises temperature quickly and evenly across large volumes, making it suited for stocks, soups, sauces and stews that must reach a rolling boil without scorching. The heat source is adjustable, allowing precise control over simmering or rapid boiling as the recipe demands.
The operator loads the 300 litre vessel through the hinged lid, then ignites the burners with the manual piezo spark. A pilot flame remains lit to ensure instant re-ignition if the main flame is extinguished. Once the desired temperature is reached, the kettle maintains it with minimal intervention. When cooking is complete, the insulated drain tap at the front allows the contents to be drawn off without risk of burns.
The cooking vessel is constructed from AISI 316 stainless steel at the base, with walls of AISI 304 stainless steel. Both grades are corrosion-resistant, while the thicker base (20/10 to 40/10 gauge) withstands direct flame contact. The outer jacket and worktop are satin-finished AISI 304 stainless steel, chosen for durability and ease of cleaning. Adjustable legs allow the unit to be levelled on uneven floors, and a safety valve set to 0.5 bar prevents over-pressurisation.
Controls are minimal: a gas supply tap with built-in safety shut-off and thermocouple, and the piezo ignition. The 39 kW power rating indicates the load on the gas supply, requiring a dedicated commercial gas line. The 300 kg weight means the unit must be positioned on a solid floor or reinforced worktop. The 1200 x 1270 x 900 mm footprint dictates the space it occupies, including clearance for the flue grille at the rear.
Cleaning involves draining the vessel, then scrubbing the interior with non-abrasive pads to preserve the stainless steel surface. The drain tap should be flushed to remove sediment, and the exterior wiped down with a damp cloth. The hinged lid and safety valve require periodic inspection to ensure they operate smoothly.
The MRG-300 is a standalone unit but can be integrated into a larger kitchen layout alongside other professional appliances. It is classified as a boiling kettle in the FAGOR professional catering range.
