| NOTES | Indirectly heated gas |
Professional gas boiling kettle with indirect heating, designed for preparing large quantities of food. Rectangular construction with a cylindrical cooking tank. The heat generated by the gas burners heats the water inside the double jacket, producing saturated steam that ensures gentle heating of food and reduces the risk of burning. Heating is provided by high-performance stainless steel tubular gas burners.
A gas boiling kettle heats liquid indirectly through a sealed water jacket surrounding the cooking vessel. Gas burners beneath the jacket raise the temperature of the water, which in turn transfers heat evenly to the contents of the kettle without direct flame contact. This method prevents scorching and allows precise control over large volumes of stock, sauces or soups, making it essential for high-volume catering operations.
The MRIG-300 is loaded through the hinged lid at the top. Once the vessel is filled to the required level, the operator ignites the gas burners using the manual piezo ignition and pilot light. The water jacket heats, warming the contents of the kettle gradually. A safety valve set to 0.5 bar prevents over-pressurisation. When cooking is complete, the operator opens the insulated drain tap at the front to release the contents into waiting containers or serving lines. The lid remains closed during operation to retain heat and reduce energy loss.
The cooking vessel is constructed from AISI 316 stainless steel with a thickness of 20/10 to 40/10, chosen for its resistance to corrosion and high temperatures. The vessel walls and lid are made from AISI 304 stainless steel, with the walls at 20/10 to 25/10 thickness and the lid at a standard gauge. The outer shell and worktop are satin-finished AISI 304 stainless steel, the shell at 10/10 and the worktop at 15/10 for durability under daily use. The supporting frame is also stainless steel, fitted with adjustable legs for levelling on uneven floors.
Controls are minimal and robust: a piezo ignition for the gas burners and a pilot light to confirm the flame is lit. The safety valve operates automatically, releasing pressure if it exceeds 0.5 bar. The insulated drain tap allows safe, controlled emptying of the kettle without risk of burns.
A 300 litre capacity allows the kettle to handle large batches of liquid-based dishes, reducing the need for multiple smaller units in a busy kitchen. The 48 kW power rating indicates a substantial gas load, requiring a dedicated supply line and proper ventilation for exhaust gases. The 1200 x 1270 x 900 mm footprint demands a fixed position on the kitchen floor, with clearance around the unit for safe operation and maintenance. At 300 kg, the kettle is not moved once installed; forklift or pallet truck assistance is necessary during delivery and positioning.
Cleaning involves draining the vessel completely after each use, then wiping down the interior with a non-abrasive cloth and approved cleaning agents. The lid, hinges and safety valve should be checked regularly for debris or blockages. The gas burners and exhaust grille require periodic inspection to ensure efficient combustion and safe venting of fumes. The satin-finished exterior resists fingerprints and is easily wiped clean with a damp cloth.
The MRIG-300 is the standard model, with no stated variants. It is designed for integration into professional kitchen setups, either as a standalone unit or combined with other catering equipment.
This model is listed in the FAGOR professional catering range under large-capacity boiling kettles.
