Professional gas bratt pan with a tilting tank and direct heating, designed for preparing large quantities of food. Direct gas heating means that the heat generated by the gas burners is transferred directly to the bottom of the cooking tank, ensuring rapid heat transfer. The unit is suitable for frying, stewing, boiling, and other cooking processes.
A tilting bratt pan combines a deep, flat cooking surface with the ability to pour liquids or transfer food directly from the pan. Gas flames heat the thick stainless steel base evenly, transferring heat quickly and maintaining consistent temperatures across the entire cooking area. This method allows for rapid adjustments in heat, making it possible to sear, simmer, braise or boil in the same vessel without transferring food between appliances. The pan's depth holds large volumes of liquid, while its flat base ensures even contact with the heat source, preventing hot spots that can scorch food or leave it undercooked.
To operate, the pan is filled with ingredients or water using the single-feed tap. The gas burners are ignited manually or via electric piezo ignition, depending on the version. Once lit, the burners heat the base directly, and the operator sets the desired temperature using the controls. The pan's rounded internal corners prevent food from sticking and make stirring easier. When cooking is complete, the hydraulic tilt system, powered by a front-mounted mechanism, lifts and tilts the pan forward, allowing liquids or food to be poured out cleanly. The lid, fitted with a chrome-plated support and spring-assisted hinge, can be closed to retain heat or opened to monitor progress.
The 150 L capacity allows bulk preparation of soups, stews, sauces or braised dishes, while the 33.04 kW power rating ensures rapid heat-up and sustained performance under heavy use. The 1600 x 905 x 930 mm footprint requires a dedicated section of the worktop, and the 330 kg weight means the unit must be positioned on a stable, load-bearing floor. The adjustable stainless steel legs ensure the pan can be levelled on uneven surfaces, preventing spills or uneven cooking.
Construction is entirely from stainless steel, with AISI 304 used for the pan walls, lid, external panels and worktop, and AISI 316 for the 10 mm thick base, which resists corrosion and withstands high heat. The hydraulic tilt system operates automatically, and a safety thermostat cuts the gas supply if the pan overheats. A flue grid vents combustion gases, and a set of nozzles is included for different gas types. The pan's exterior and interior are designed for easy cleaning, with smooth surfaces and rounded corners that prevent food build-up.
Maintenance involves wiping down the stainless steel surfaces after each use, checking the gas nozzles for blockages and ensuring the hydraulic system is free of leaks. The pan can be filled with water for cleaning, and the tilt mechanism allows complete drainage. The safety shut-off system must be tested regularly to confirm it engages during faults.
