A professional refrigerator built for high-volume kitchens, the FAGOR SNACK CUD-23S/F keeps chilled goods at 0 to +8 °C in its main section while its dedicated fish compartment maintains a colder -2 to -4 °C zone.
Inside, a forced-air system circulates chilled air continuously. Fans draw air across the evaporator coils and push it evenly through each compartment, eliminating hot spots and keeping every shelf at the set temperature. The main refrigerator section uses off-cycle defrost: the compressor stops periodically, allowing any frost on the coils to melt naturally. The fish compartment, where humidity is higher, relies on an electric defrost system that warms the coils on a timed cycle, preventing ice build-up without raising the storage temperature.
Operation is straightforward. The electronic control panel on the front sets the temperature for each section independently. Once the desired levels are entered, the unit maintains them automatically. LED lighting switches on when the doors open, giving a clear view of contents. Shelving adjusts in 18 positions on epoxy-coated runners, so trays, pans and containers of different heights can be organised without wasted space. The fish compartment holds three wire baskets for bulk storage of whole fish or fillets.
The cabinet is built entirely of stainless steel, inside and out. A 50 mm layer of insulation surrounds the compartments, reducing energy use and keeping the interior stable even when the kitchen is warm. Four adjustable legs level the unit on uneven floors and raise it for cleaning underneath. The three doors seal tightly with magnetic gaskets, minimising cold air loss each time they open.
