A table-top cutter slices, chops and emulsifies ingredients by spinning a set of curved blades at high speed inside a sealed bowl. The blades create a vortex that pulls food towards the centre, ensuring every piece is cut evenly without manual stirring. Variable speed lets the operator start gently for coarse textures and increase to a fine mince or smooth purée, while the sealed bowl prevents splashing and keeps the worktop clean.
To use the FIMAR BC/5NV, place the bowl on its base and secure the lid. Load up to 2.8 L of ingredients through the feed tube or the hinged lid. Select the desired speed with the control knob, then start the motor. The blades rotate between 260 and 2120 rpm, allowing the operator to adjust from a slow pulse for herbs to a fast chop for nuts or vegetables. Once the texture is reached, stop the motor, remove the lid and scrape or pour the contents from the bowl.
The cutter is built on a stainless-steel chassis that stands 710 mm long, 320 mm wide and 850 mm high. A 5 L stainless-steel bowl holds the ingredients, and the entire unit weighs 24 kg, making it stable on a worktop yet light enough to move when needed. The 0.75 kW motor runs on a 230 V single-phase supply, the standard circuit found in most professional kitchens.
Cleaning follows from the construction: remove the bowl and blades, wash them in hot soapy water or a commercial dishwasher, then wipe the base and control panel with a damp cloth. The variable-speed control requires no calibration, and the sealed motor needs no lubrication.
