A tabletop cutter processes ingredients by spinning a set of curved blades at high speed inside a sealed bowl. The blades create a vortex that pulls food towards the centre, ensuring even chopping, mixing or emulsifying without manual scraping. This method delivers consistent texture in far less time than hand chopping or a standard food mixer, making it essential for sauces, forcemeats, pâtés and finely minced vegetables.
To operate the FIMAR CL/5V2, the operator lifts the transparent lid, loads up to 2.1 L of ingredients into the 5 L stainless-steel bowl, and secures the lid. The two-speed switch selects either 1400 rpm for coarse chopping or 2800 rpm for fine emulsions. Once the motor is started, the blades run until the operator stops them or the lid is opened, which automatically cuts power for safety.
The unit is built as a single stainless-steel block with a clear polycarbonate lid. The motor housing measures 240 mm wide, 310 mm deep and 570 mm high, fitting neatly on a worktop or under standard cupboard heights. A 400 V three-phase electrical supply is required, matching the circuits commonly installed in professional kitchens for heavy-duty equipment.
The dual-speed motor allows the operator to switch between coarse and fine processing without stopping the machine. The 5 L bowl capacity is sized for batch preparation in small to medium kitchens, while the 21 kg weight ensures stability during operation without needing permanent fixing to the worktop.
Cleaning follows the sealed construction: the bowl and blades are removed, washed in hot soapy water or a commercial dishwasher, and dried before reassembly. The motor housing is wiped down with a damp cloth and never submerged.
The CL/5V2 is a single model without variants or accessories listed in the current catalogue.
