A tabletop cutter slices, chops and emulsifies ingredients by spinning a set of curved blades at high speed inside a sealed bowl. The blades pull the food towards the centre, then fling it outwards against the bowl wall, breaking it into fine, even pieces without crushing.
To use the CL/8V2, the operator loads the 8 L bowl with up to 2.4 L of ingredients, secures the lid and selects one of the two motor speeds. At 1400 rpm the blades turn more slowly for coarse chopping or mixing; at 2800 rpm they spin faster for fine emulsions or purées. The motor starts and the blades run until the operator stops them, after which the bowl is removed, emptied and cleaned.
The unit is built as a single stainless-steel body with a clear polycarbonate lid. The 240 mm front, 310 mm depth and 620 mm height allow it to sit on a standard worktop or shelf. A three-phase 400 V electrical supply is required, matching the circuits commonly installed in professional kitchens. The 21 kg weight keeps the cutter stable during operation and allows it to be moved with a trolley when necessary.
Controls consist of a two-position rotary switch for speed selection and a separate start/stop button. The switch sets the motor to either 1400 or 2800 rpm, while the button starts and stops the blades once the speed is chosen.
The 8 L bowl capacity determines the maximum batch size, while the 2.4 L maximum load prevents overfilling and ensures the blades can circulate the food properly. The dual-speed motor allows the operator to choose the texture required for each recipe. The 400 V three-phase supply means the unit must be connected to a dedicated circuit capable of handling the power draw without tripping.
Cleaning involves removing the bowl and lid, washing them in warm water with detergent, and wiping the stainless-steel body with a damp cloth. The blades should be checked for sharpness and replaced when they no longer cut cleanly.
