A grinding disk determines the texture of minced meat, vegetables or other ingredients in a professional mincer. The disk fits between the feed screw and the knife, forcing the food through its precisely sized holes under pressure. Smaller holes produce a finer mince, while larger ones leave a coarser texture. The disk's sharp edges shear the food cleanly, reducing friction and heat build-up that can affect flavour and safety.
To use the Disk S2, first switch off and unplug the mincer. Remove the end cap, knife and existing disk. Place the new 2 mm disk against the knife, ensuring the cutting edges align. Reassemble the end cap and tighten it securely. Feed the ingredients through the hopper, allowing the feed screw to push them against the disk. The mince emerges on the far side in uniform strands of 2 mm diameter, ready for further processing or immediate use.
The Disk S2 is made of hardened stainless steel, chosen for its resistance to corrosion and wear. The 2 mm hole size is standardised for fine mincing, commonly used for sausages, pâtés and dishes requiring a smooth, even texture. The disk's thin profile minimises resistance, allowing the mincer to operate at full speed without overloading the motor.
This disk fits FIMAR professional mincers and is compatible with other brands that use the same disk diameter and mounting system. It is a direct replacement part, requiring no modification or additional tools for installation.
Cleaning is straightforward: remove the disk after use, scrub it with a stiff brush under hot water to clear trapped particles, then sanitise before storage. Regular inspection for burrs or deformation ensures consistent performance and extends the disk's service life.
The Disk S2 is listed in the catering spares section under mincer accessories, where it appears alongside other grinding disks and replacement parts for commercial food preparation equipment.
