A gramigna nuzzle shapes pasta dough into the classic ridged tubes that hold sauce. The dough is forced through the circular die under pressure, emerging as continuous strands with a corrugated surface. This texture increases the surface area, helping the pasta grip and retain sauces more effectively than smooth shapes. The process relies on steady extrusion pressure and a precisely sized opening to maintain uniform thickness and ridges.
To use the nuzzle, attach it to the extruder's die head, ensuring it is securely locked in place. Load the dough into the hopper and start the machine. The dough is pushed through the nuzzle by the auger, forming gramigna strands. Once the desired length is reached, cut the strands with a knife or pasta cutter. The nuzzle's fixed diameter ensures consistent shape and size with each batch.
The nuzzle is made of a brass and bronze alloy, chosen for its durability and resistance to corrosion in a high-moisture environment. The alloy also provides a smooth surface that minimises friction, reducing wear on the dough and the machine over time.
This ⌀3.5 mm nuzzle is designed for the FIMAR PF15E pasta extruder. It can also be fitted to PF25E, PF40E and PF80E models with the appropriate adapters, which are sold separately. The size of the nuzzle determines the final diameter of the pasta, influencing both cooking time and the texture of the finished dish.
Cleaning is straightforward: remove the nuzzle from the extruder after use and rinse it under warm water to remove any dough residue. For thorough cleaning, use a soft brush to clear the ridges and opening. Avoid abrasive tools that could scratch the surface. Regular cleaning prevents dough build-up and maintains the nuzzle's performance.
